Itsy Oops, Ouch & Yeah..! ' #1 ' (Air cond and fridge, please be nice to us..!)


Hello, Hi, and Hey!

If you are on the same ride as we are for the past weeks, you will notice that we have chosen every Friday to be 'The Itsy Story...' day and every Monday will be the day for 'Itsy Made To Order...'. We will try our best to share all rides every week. but due to time limitation or pack schedule or even if there are times that our brain just refuse to cooperate, we might miss some rides now and then. But don't worry, we will make sure that we will share something every week, minimum once or sometimes, if you are lucky, there can be more! So, today, we have decided that, we would like to take you on another ride for 'Thursdays'.

It is named, 'Itsy Oops, Ouch and Yeah..!" day. Here, in this particular heading, we will share some issues, problems or even great things that we have experience and still experiencing in general through out this 'bakinglicious' world of our own which is not order or task related in particular. Just something in general.

Weather and temperature. Two different words which to us are best friends. In decorating, be it fondant or buttercream these two so called 'best friends' can give a very major impact on us.

Our first experience in temperature difference issue is when we made two buttercream cakes for Mothers' Day and two simple fondant cakes for birthday. Luckily, they were not ordered by anyone, just a token from us to itsymommy, mother in law, sister and sister in laws (all the moms in itsyfamily). The birthday cakes were for our nieces which falls on the same weekend of Mothers' day.

Previously, our refrigerator was not functioning well. But lucky us, out of so many days, it actually picks the day that we made the cakes to actually functioning well.  Thank you Mr. Refrigerator. 

We were so happy that the refrigerator was working well and already imagine how great our cakes will be once its done. However, to not be alert enough, refrigerator's temperature is not the only thing that matters. Even if you are able to chill your cake after crumb coating and final coating of buttercream as well as to chill your piped buttercream flowers, you will still have problems, and the problem is our cake was sweating after we took it out from the fridge. Even worst, actually all of our cakes were sweating including the fondant cakes. Because, we still need to coat the fondant cakes with buttercream and chill them before covering them with fondant. Since our buttercream covered cake was sweating once out of the fridge, we can't help to get a sweaty fondant cake as well.

We can't smooth out the fondant and there are lumps (air bubble) on the fondant,

Being a beginner, we did not able to figure out the reasons behind the sweaty cakes incident. Because you know what? In most of the tutorial that we have come across, they only tell you to chill your cake after crumb coat and final coat. So, we did the same and wondering where did we went wrong.

After so much of researching, and googling. We finally got the most logic answer. In Malaysia, we are not a four seasons country and we do not have any winter here. It is all sunny and with some rain through out the year (here, the weather issue takes its part). So, our kitchen room temperature and our fridge temperature do not match and not even close. When the cake was taken out from fridge, the cake was actually can't take the huge difference in temperature between the fridge and the kitchen room temperature all at once which has cause all the sweating. Just like how ice would melt once out of the freezer. 

So, here comes the air cond role. We actually need to keep the temperature difference gap of the fridge and room temperature as small as we can. So, whenever we need  to decorate a cake, we will turn on the air cond in advance prior to decorating and get the room temperature to be a bit lower and cool. So that, after chilling our cakes and took them out from fridge to decorate, the cakes can take their own sweet time adjusting to a different temperature. Then, you can enjoy decorating your cake with the absence of 'sweaty cakes'.

Dear refrigerator and air cond.,
We are here begging you to please be nice to us. Always! Because the weather, they just don't care. Please... Not to get sick on the last minute. We can't get you a doctor at 2 am in the morning!
